1. BLUEBERRY-BANANA NO BAKE COOKIES
What you'll need:
2 cups sugar
1/2 cup milk
1 stick (8 tablespoons) unsalted butter
1/4 cup unsweetened cocoa powder
2 cups old-fashioned rolled oats
1 stick (8 tablespoons) unsalted butter
1/4 cup unsweetened cocoa powder
2 cups old-fashioned rolled oats
1 packet of blueberry flavored oatmeal
1 packet of banana flavored oatmeal
Optional for extra flavor:
1 cup smooth peanut butter
1 tablespoon pure vanilla extract
Large pinch kosher salt
Instructions:
Step One - Bring the mixture of sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally. Once it comes to a boil give it a minute more while you prep your cookie trays with wax paper or parchment.
Step Two - Remove the saucepan from the heat. Mix the old fashioned rolled oats and flavored oats together in a large mixing bowl. Now dump in the saucepan contents and, if you desire a little extra flavor, the optional ingredients. Mix it all together thoroughly.
Step Three: It's time to grab a spoon (or small ice cream scoop if you want a more rounded cookie). Scoop out the no bake mix and place it on your prepped cookie sheets. Let it cool & harden at room temp. Should take between 30 to 60 minutes.
Step Four: Once your no bakes have achieved a relatively hardened status you can transfer them into storage containers to be given to friends and family.
Notes: Though it's not required for no bakes to be refrigerated, it's fine if you do and it may even help them keep their shape. Also, if you find that during the mixing process your mix is either too runny or too solid you can adjust the milk & oats portions. P.S. If you aren't a fan of blueberry &/or banana you can switch out the flavored oats packets for one of the other available flavors; i.e. apple cinnamon and brown sugar maple. Cooking should be fun! Don't be afraid to experiment.
